Spicy Pan-Seared Tilapia

This is really very simple to prepare.  I love fish and was trying to come up with a way to prepare it besides the usual frying or baking.  So, I decided to try cooking it in the skillet.  I really love Cracker Barrel's spicy grilled catfish and thought maybe I could try something similar with tilapia!  It makes for a quick, healthy meal alongside a serving of steamed veggies! 

 You'll need tilapia filets, EVOO, Original Mrs. Dash, salt, and pepper.  I prepared two filets today so you will need to adjust the oil and seasonings depending on how many filets you are preparing. 

 I season both sides with a little salt and pepper and a generous sprinkle of Mrs. Dash.  Sorry I don't measure but if you look at the photo above, you can get the idea! 

 Heat about a T. of EVOO.  Be sure to get the oil HOT before placing the tilapia in the skillet.  You want that fish to SIZZLE when it goes in the skillet.  That will also give it a nice crust!

 Cook for 2-3 minutes (or until the edges of the fish go from pink to white) and then flip!

 Cook for an additional 2-3 minutes on the other side.

tilapia filets
EVOO
Mrs. Dash
salt & pepper to taste

Season both sides of tilapia with salt and pepper and also a generous sprinkle of Mrs. Dash seasoning.  Heat EVOO in skillet.  Add tilapia and cook for 2-3 minutes on each side.
