One of my favorite things to order at one of our local tea rooms is Quiche Lorraine. I couldn't help but think these flavors would be a great variation for the breakfast burrito recipe! I ended up only making a half a batch because I didn't want to be stuck with a large batch of burritos I didn't care for! Well, I should've made the big batch because I ended up making more today! They are so yummy!! These would even make a great lunch or supper as well!! Hope you enjoy!! Bacon & Swiss Breakfast Burritos
6 slices bacon (cooked & crumbled)
2 green onions finely chopped (white & green parts)
6 T. milk
salt and pepper to taste
1 cup swiss cheese
8 flour tortillas
Whisk together eggs, milk, salt and pepper. In a skillet sprayed with cooking spray, cook eggs over medium heat until set. Add in bacon, onions, and cheese. Cook just until cheese is melted. Remove from heat and allow mixture to cool for 5-10 minutes. Use a 1/3 cup of mixture for each tortilla. Wrap in saran wrap and foil and freeze. To reheat from frozen, place in microwave for 1 1/2 minutes.
